Ingredientes para el chorizo :
5 dientes de ajo
1 cucharadita de orégano
1 cucharadita de pimienta
3/4 de taza de vinagre
5 chiles pasillas grandes
1 pizca de comino
3 clavos de olor
sal la necesaria
1/2 kilo de carne de soya molida
1/2 taza de aceite
Ingredientes para hidratar la soya :
Chile verde
Ajo
Cebolla
Cilantro
Apio
COMO SE HACE :
- Poner a cocer el chile pasilla,cuando ya esté se licua con el ajo y el orégano.
-Aparte se pone a hervir agua con chile verde,apio,cilantro y cebolla,ahí se hidrata la soya,se quita de la lumbre y se deja reposar media hora.
-Se exprime bien y se pone en un recipiente grande con el chile pasilla que ya licuamos con el ajo, añadimos el vinagre, el aceite, el orégano,la pizca de comino,el clavo y la sal
- Se deja reposar todo esto unas horas y listo para guisarse.

This is how we do it!:
We want to boil the chile pasilla, clean it, which means to remove the seeds inside, blend it with the spices and the garlic, we put this in a big container along with the soy, stir stir stir and let it rest for a few hours.
